Cavit, founded in 1950, has earned its reputation as one of the most influential wine cooperatives in Italy. Pinot Nero, known internationally as Pinot Noir, is a red grape variety with origins in the Burgundy region of France. It is notoriously sensitive to its growing environment, making it a true test of a winemaker’s skill. The Trentino region, with its Alpine climate and mineral-rich soils, provides an ideal terroir for cultivating Pinot Nero grapes. Carefully handpicked from select vineyards in Trentino, where the cool nights and warm days contribute to the grapes’ perfect ripening. After the gentle crushing of the grapes, the must is left in contact with the skins for a brief period to extract just the right amount of colour and tannins. The fermentation process occurs at controlled temperatures, allowing the wine to preserve its vibrant fruit flavours.
Following fermentation, the wine is aged in a combination of French oak barrels and stainless-steel tanks. This careful aging process adds layers of complexity, softening the tannins and infusing subtle nuances of oak while retaining the wine’s inherent fruitiness.
On the nose, you will discover a harmonious blend of red berry fruits like cherry and raspberry, accompanied by gentle floral notes and a hint of spice. On the palate, the wine’s elegance continues to unfold, with a velvety texture and a well-balanced structure. The fruity notes persist, joined by delicate earthy undertones and a touch of vanilla from the oak aging.
An excellent companion for dishes like roasted duck, grilled salmon, or even mushroom-based vegetarian options. Additionally, its gentle tannins harmonize well with soft cheeses.
