The Cachapoal Valley, where Château Los Boldos is located, offers an ideal environment for viticulture. The region benefits from a Mediterranean climate with warm, sunny days and cool nights, which allows for a slow and balanced ripening of the grapes. The valley is characterized by alluvial soils with excellent drainage, which, combined with the gentle slopes and the influence of the nearby Andes Mountains, creates a unique terroir that enhances the quality and complexity of the wines produced here.
Carménère, originally from Bordeaux, was thought to be extinct until it was rediscovered in Chile in the 1990s, where it had been mistakenly identified as Merlot. Today, Carménère is celebrated as Chile’s signature grape, known for its deep color, rich aromas, and smooth tannins.
The winemaking process at is meticulous and focused on preserving the integrity of the fruit. After harvesting, the grapes undergo a cold maceration to extract colour and aroma, followed by a controlled fermentation to ensure the development of the desired flavour profile. The wine is then aged in French oak barrels for approximately 12 months, which adds depth, complexity, and a subtle oak influence.
On the nose, the wine offers an alluring bouquet of ripe blackberries, plums, and black cherries, interwoven with notes of black pepper, tobacco, and a hint of vanilla from the oak aging.
On the palate, the wine is full-bodied and well-structured, with velvety tannins that provide a smooth and elegant mouthfeel. Intense and layered, with the dark fruit character beautifully balanced by spicy undertones and a touch of chocolate. The finish is long and persistent, leaving a lasting impression of ripe fruit and spice.
This is a versatile wine that pairs wonderfully with a variety of dishes. Its rich flavours and smooth tannins make it an excellent companion to grilled meats, especially lamb or beef, and it also complements hearty stews and aged cheeses. For a more adventurous pairing, try it with dishes that incorporate spices or dark chocolate.
