The Hangin Snakes follows the traditional Northern Rhone (Cote Rotie) recipe of co-fermenting a small proportion of the white variety Viognier with the Shiraz, this adds a layer of complexity and perfume to the wine. This traditional approach is carried through the vinification with open fermented grapes being basket pressed and aged in 225 litre French oak barriques. The nose is highly perfumed with notes of spiced plums, raspberry jam, apricot and sweet spices. On the palate it is rich and soft with bright red and black fruit with the oak adding cinnamon and vanilla complexity. The finish is long and spicy extending into a peachy, Viognier conclusion. Enjoy with rich tomato and Pork Ragu.
