Mount Etna, Europe’s highest active volcano, is the source of the distinctive terroir that defines Etna wines. The vineyards for Nicosia’s Contrada San Nicolò are situated on the northern slopes of Etna, at altitudes ranging from 600 to 900 meters above sea level. This high-altitude environment, combined with the volcanic soils rich in minerals, creates ideal conditions for growing white grape varieties that exhibit both freshness and depth.
The volcanic soil is particularly significant, as it imparts a unique mineral quality to the wine. This soil, composed of lava, ash, and sand, is porous and well-drained, forcing the vines to dig deep for water and nutrients. The result is grapes with concentrated flavours and a distinctive minerality that sets Etna Bianco apart from other white wines.
The Nicosia Contrada San Nicolò Etna Bianco is primarily made from Carricante, a native Sicilian grape that thrives in the Etna region. Carricante is known for its high acidity and ability to express the mineral characteristics of its terroir.
Nicosia’s approach to winemaking is a careful blend of tradition and modern techniques. The grapes for the Contrada are hand-harvested to ensure that only the best fruit makes it to the winery. After harvesting, the grapes undergo a gentle pressing to extract the juice, which is then fermented in stainless steel, on fine lees and with regular batonnage, and spends a further 3-4 months in bottle before release.
Pronounced and complex nose with savoury, nutty aromas and hints of fennel, ginger and white spice. The palate is fine, concentrated and textural, with lightly honeyed stone fruit balanced by minerality and sappy acidity. Long and savoury on the finish.
Ideal as an aperitif or accompaniment to seafood, sushi, fried fish and vegetable tempura.
