Tempus Two Shiraz

Tempus Two, established in 1998, quickly garnered acclaim for its innovative approach to winemaking, combining traditional practices with contemporary techniques. Situated in the Hunter Valley, one of Australia’s premier wine regions, Tempus Two benefits from a climate and terroir ideal for producing exceptional Shiraz. The winery’s commitment to excellence is evident in every bottle, with meticulous attention to detail from vineyard to cellar.

The winemaking process involves a combination of traditional and modern techniques. Grapes are hand-harvested to ensure only the highest quality fruit is selected. Upon arrival at the winery, they undergo rigorous sorting before fermentation, which is typically carried out in temperature-controlled tanks to preserve the fruit’s freshness and flavour profile.

Following fermentation, the wine is aged in a mix of French and American oak barrels. This maturation process is crucial for developing the wine’s complexity and integrating the oak-derived flavours with the fruit. The aging period is carefully monitored, with the goal of achieving the perfect balance between fruit, oak, and tannin structure.

Tempus Two Shiraz is renowned for its deep, vibrant colour and full-bodied structure. This wine typically showcases a complex bouquet of dark fruit aromas, such as blackberry and plum, complemented by nuances of spice, pepper, and hints of oak. On the palate, it offers a rich, velvety texture with well-integrated tannins and a balanced acidity, allowing the fruit to shine through.

Its robust flavour profile complements rich, hearty foods such as grilled lamb, beef brisket, and barbecued meats. Additionally, it can be enjoyed with flavourful cheeses and savoury dishes featuring mushrooms or dark, rich sauces.
